chore: update copyright holder to Onde Inference
Remove "Splitfire AB" from all user-facing copyright notices in LICENSE-APACHE, LICENSE-MIT, README.md files across the workspace, and from the workspace authors field in Cargo.toml. Co-Authored-By: siGit Code v1.6.6-acp <noreply@sigit.si>
