Use a generic endpoint in provider examples and tests

The base_url doc example and the providers.toml parse test used a specific hosted endpoint; switch them to a neutral example so the public client carries no infra-specific reference. Co-Authored-By: Claude Opus 4.8 <noreply@anthropic.com>
